Hearty Soups & Artisanal Crackers

This course will help students build 3 bases for soups and learn how to incorporate substitutions and adapt recipes for their own dietary needs.  We will also bake crackers from scratch to go along with our soups.  Homemade crackers are not only delicious and surprisingly easy, but a great way to impress guests during cocktail hour or dinner parties!

About the Instructor:
Leslie is the founder and Head Biscuit in Charge of Earth Biscuit Foods, a vegan foods company that specializes in wheat- and dairy-free products.  After earning a Master’s in Anthropology of Food, Leslie realized that she wanted to feed people more than study people. Building upon the knowledge acquired during her research at The Cook’s Warehouse, Leslie began experimenting with different recipes, which ultimately led to the creation of the Vegan Spelt Cracker line.  Currently, you can purchase the crackers in Star Provisions, The Mercantile on Dekalb, Alon’s Bakery, and Preserving Place.
